1 seedless watermelon
1 cup Nutty Crumble More Granola
1 cup strawberries, sliced in half
1/2 cucumber (ribboned)
1/2 cup pomegranate seeds
1/2 cup feta cheese (cubed)
1/4 cup honey
Fresh mint leaves
- Using a sharp knife, cut off a couple of slices of watermelon right down the middle (about 1-2 inches thick) and then cut each slice into wedges.
- On a big serving plate assembly the watermelon cross-section (the shape of a pizza). Start with the biggest wedges and finish with the smallest.
- Layer your feta cubes, cucumber ribbons, fresh fruit, granola chunks and mint leaves on top as you please. You can add as little or as many toppings as you like.
- Mix honey and lime juice to make a dressing. Drizzle it on top. Serve immediately. Enjoy!
