Baked Brie With Blackberry Compote

Baked Brie With Blackberry Compote
Ingredients:
1 wheel of Brie (room temperature)
2 cups Nutty Crumble More Granola
1/2 cup pecan halves
1 tsp maple syrup
Pinch of ground nutmeg
1 cup blackberries plus more for garnish
1 Tbsp lemon juice
1/4 cup cranberries
a few fresh thyme or rosemary sprigs as garnish (optional)

Instructions:
  1. In a medium saucepan, heat the blackberries, lemon juice, nutmeg and maple syrup, stirring regularly. As liquid begins to release from the berries, turn the heat down. Cook, stirring periodically, until it is reduced.
  2. Pre-heat the oven to 350 F.
  3. Line a baking sheet with parchment paper.
  4. Carefully slice away the top of the Brie rind. Leave the sides intact. Bake Brie for 12-15 minutes or until melted in the middle.
  5. Carefully transfer the brie to a serving dish (it’s easier to transfer it with the parchment paper).
  6. Top evenly with blackberry compote, sliced cranberries and pecans leaving a ½-inch margin around the edges.
  7. Alternatively, you can add the blackberry compote halfway through baking and place the brie back in the oven (for a messier look with sauce dripping down the sides).
  8. Garnish with fresh thyme/rosemary sprigs.
  9. Serve with Nutty Crumble Granola chunks (for dipping). Enjoy!
