Hot Cocoa Chia Pudding Parfaits

Serves 2-4

Ingredients:
1 ½ cup coconut milk (or other nut milk)
⅓ cup chia seeds
2 tbsp maple syrup
1 ½ tbsp cocoa powder
½ tsp vanilla extract (optional)
Pinch of sea salt


To Serve:
½ cup Hot Cocoa More Granola 
¼ cup plain or vanilla coconut yogurt (or yogurt of choice)

Method:

Whisk all ingredients except cocoa powder together in a jar or bowl. Remove half of the mixture, place it in a separate container, and whisk in the cocoa powder. Let both the plain and the chocolate chia puddings set in the fridge for at least 1 hour or overnight.


To serve, take 2-4 glasses or jars (depending how big they are) and sprinkle 2 tbsp of granola into the bottom of each one. Add a layer of the prepared plain chia pudding, then a layer of the chocolate chia pudding, and then 2 tbsp of yogurt. If your serving vessels are big enough, you can repeat this process again. Top each parfait with the remaining granola, serve and enjoy!
