Vanilla Coconut Macaroon Oatmeal

Serves 1

Ingredients:
½ cup rolled oats
1 cup full-fat coconut milk (the kind from a can)
2 tbsp maple syrup, divided
1 tbsp chia seeds
½ tsp cinnamon
Big pinch of sea salt
¼ tsp vanilla extract (optional)

To Serve:
1 tbsp almond butter
⅓ cup Coconut Macaroon More Granola 
Coconut yogurt
Fruit of choice (banana, berries, etc.)

 

Coconut Macaroon More Granola Oatmeal Recipe

Method:

In a small saucepan, add your rolled oats and coconut milk and bring the mixture to a boil over high heat. Once boiling, add the chia seeds, cinnamon and salt and reduce the heat to a low simmer. Let the oatmeal cook for 5-10 minutes or until very creamy and thick. You can add a splash more coconut milk or water if it gets too thick. Remove from the heat and stir in your vanilla extract and 1 tbsp maple syrup.

To serve, place oatmeal in a bowl and top with the other 1 tbsp (more or less as desired) maple syrup, a big spoonful of coconut yogurt, fruit, almond butter and a handful of granola.
