We use 100% pure Canadian, unpasteurized honey in our granola. Pasteurization is a processing technique by which high heat is applied to honey to remove yeast and increase its shelf life. Unpasteurized (or raw) honey is as close to its natural state as possible, retaining its nutrients and antioxidants.
