Matcha Coconut Chia Pudding
Serves 1-2
Ingredients:¼ cup chia seeds
1 ¼ cup coconut milk
1 tsp Lake & Oak Mega Matcha
1 tbsp maple syrup
1 tsp vanilla extract
Toppings:
Coconut Macaroon More Granola
fresh mango
vanilla yogurt
Method:
In a jar or resealable container, add matcha, a splash of water and maple syrup. Whisk to dissolve matcha.
Add coconut milk and vanilla. Stir or shake well to combine.
Place in the fridge for at least 2 hours, or overnight*
When ready to serve, top with granola, vanilla yogurt and fresh mango.
(*Chia pudding will keep fresh in the fridge for up to 5 days)
