Caramel Apple Pie Yogurt Parfaits

Serves 2
Ingredients:
1 large or 2 small Honeycrisp apples, chopped into small cubes
1 tsp coconut oil
2 tbsp maple syrup, divided
½ tsp cinnamon
⅛ tsp nutmeg
1 cup yogurt of choice
2 tbsp almond or cashew butter
1 tbsp almond milk
Pinch of sea salt
Nutty Crumble More Granola

Method:
In a small saucepan or skillet, heat your coconut oil over medium heat. Add your apple cubes, cinnamon and nutmeg and stir. Cook the apples, stirring occasionally, for 8-10 minutes or until they are very soft and browned, making sure they don’t burn. Remove from the heat and stir in 1 tbsp of maple syrup.
To make the 'caramel', whisk together your almond or cashew butter, almond milk, a pinch of sea salt the other 1 tbsp maple syrup in a small cup or bowl. Add more milk to reach your desired texture - it should be thick but pourable.
To assemble, place ¼ of the apple mixture at the bottom of two glasses or jars. Top each with ½ cup of yogurt, then another ¼ of the apple mixture, and then a handful of Nutty Crumble granola. Drizzle each with a big spoonful of caramel and serve.
