Watermelon Feta Salad

Ingredients:

 

1 seedless watermelon

1 cup Nutty Crumble More Granola

1 cup strawberries, sliced in half

1/2 cucumber (ribboned)

1/2 cup pomegranate seeds

1/2 cup feta cheese (cubed)

1/4 cup honey 

1 lime 

Fresh mint leaves 

 

Instructions:

 

  1. Using a sharp knife, cut off a couple of slices of watermelon right down the middle (about 1-2 inches thick) and then cut each slice into wedges. 
  2. On a big serving plate assembly the watermelon cross-section (the shape of a pizza). Start with the biggest wedges and finish with the smallest. 
  3. Layer your feta cubes, cucumber ribbons, fresh fruit, granola chunks and mint leaves on top as you please. You can add as little or as many toppings as you like. 
  4. Mix honey and lime juice to make a dressing. Drizzle it on top. Serve immediately. Enjoy!
